my grand pa worked in a meat packing plant back not long after ww2 ended. he said spam and bologna are made the same way pretty much, except spam comes from a different part of the "film".
they take all of the meat scraps from various meat. (pork, turkey, chicken, beef) ... whatever the factory primarily makes. this includes bones, etc.
they put it in a giant vat and boil it. it forms a foam at the top. (ever boil a chicken and you get that white foam? same stuff). they then would pretty much scoop up this foam, and let it cool. after it cooled, it solidified into bologna. spam comes from the lower part where it's less smooth and more salty.
they might make it alittle differently now, but thats how they did it back in the day. yummy huh.
